Spaghetti Squash Pesto Dish

Its officially barbecue season! This is something I came up with last year during my lacrosse season. I just threw all these leftover ingredients together not quite sure how it would turn out and lo and behold it has become one of my and my family’s favorite dishes. This is usually how the best recipes come about…throwing random ingredients together! This is an easy and quick one-dish meal that you can add some broccoli, steak, or a side salad to, or just eat it on its own. It is a quick and easy dish to bring to your next cookout.

Ingredients:

  • one large spaghetti squash
  • 2 medium sweet potatoes
  • a handful of arugula
  • 1.5 lbs grilled chicken
  • pesto (either homemade or store bought)

Directions:

  1. Cut the spaghetti squash in half and spoon out the seeds. Then, cook the spaghetti squash. You can either roast it in the oven for an hour at 425 degrees or you can microwave it for 20 minutes.
  2. While the spaghetti squash is cooking grill the chicken and cook the sweet potatoes (either in the oven or microwave depending on how you choose to cook the spaghetti squash). Cut both the chicken and the sweet potato into cubes.
  3. Once everything is cooked, all you have to do is combine everything. I recommend getting a deep bowl to put the spaghetti squash in first and then add the chicken, sweet potato, and lastly a big handful or two of fresh arugula. Once everything is in the bowl add about 2 tbsp (more or less to taste) of pesto and mix everything together. Now you have a nice healthy “pasta salad” to take with you to your next barbecue or gathering!
