Energy balls

If you have an Instagram I’m sure you have seen the recent craze about energy balls in the paleo community! For my birthday last year I got a food processor and at first I was so excited to use it, and then I realized I didn’t know what I was going to make! So I joined the band wagon and tried someone else’s energy ball recipe, which eventually evolved into my own creation. Fistbumps.

I made these delicious balls of yum when my brother and I were home alone and after dinner we tried one for desert. After taking our first bite we gave each other a fistbump because they were so good…therefore coining the name fistbump for our delicious creation. I experimented and made many different flavors including snickerdoodle, coconut, pumpkin, and many more, but the classic recipe is my favorite. Here is the recipe…go try them for yourselves and see if you fistbump after eating one 😉

Chocolate Fistbumps:

  • 1 cup of cashews
  • 1 cup of unsweetened shredded coconut flakes
  • 1 cup of pitted dates
  • 2 scoops of vital proteins collagen
  • 1 tbsp cocoa powder
  • 1 tbsp coconut oil

Add all ingredients to food processor and blend on high speed until there are no big pieces or lumps left in the food processor. Form into small balls (they can be any size, but I usually make them about a tablespoon, which makes 11-12 fistbumps per batch) and I store them in a Tupperware in the fridge.

Note: I like eating mine when they are cold because they have more of a cookie like texture, if they are out of the refrigerator for too long they will become softer and more dough like.
